What's for Dinner?

I love Saturdays!  It's one of the only two regular days we get to all be together as a family.  Today is a beautiful, warm, sunny day and I decided that we will be grilling outside tonight instead of cooking in the kitchen.  So, what to make for dinner on the grill?  Chicken, potatoes, and squash is what I feel like with Apple Dumplings for dessert.  The recipe I use to make Apple Dumplings came from a very good friend, who now keeps Easton.  It has been a HUGE hit everytime I make it. So, thanks Tami! 

Apple Dumplings

4 Granny Smith Applies (peeled & cut into wedges - 8 per apple)
4 cans Crescent Rolls
4 Sticks Butter
3 Cups Sugar
2 Tsp Cinnamon
1 Can Mountain Dew

Preheat oven to 350 degrees.  Wrap an apple slice in each of the crescent rolls and place in a large baking dish.  In a medium saucepan, bring the butter, sugar, and cinnamon to a boil.  Boil for 5 minutes and then pour the sugar mixture over the apple rolls.  Pour the can of Mountain Dew over the top of the rolls.  Bake at 350 degrees for 40 minutes.



If you don't need this large of a batch of apple dumplings you can cut everything in half for a half batch.  They are wonderful served by warm by themselves or with a big scoop of vanilla ice cream!  Enjoy!

Now, to finish laundry (yuck!) and cleaning the bathrooms (double yuck!).

Getting Started

I have entertained the idea of starting a blog for a while now.  I have a few favorites that I follow from crafty ones to ones that I started following due to a tragedy the writer faced.  My only problem was, what kind of blog would it be?  After reading several, I decided I would do this.  I would start my own blog.  I told my husband, thinking he would be as excited about this as I was.  Instead, he informed me that he thought blogging was stupid.  It was like he had taken a pin needle and burst my bubble.  After taking a moment to gather enough hot air to reinflate my bubble, I decided poo on him, I'm going to do this.  That's when I ran into my second problem.  What in the world would I call my blog?  So, after much thought, consideration, and some really corny, weird, wacky, and just plain stupid names I decided on 'That Kind of Mommy'.  Why did I decide on this name one might ask, well let me explain.

My husband, Ben, and I have been married for nearly 6 years.  We were married on May 14, 2005 at our church in a small ceremony.  Two years after we were married, we welcomed our daughter, McKinnley Leann into the world on June 30, 2007 by c-section (not fully an emergency, but it had to be done due to her heart rate).  She was a preemie, 4 pounds 7 ounces, 17.5 inches long.  She was so tiny with the biggest cry I had ever heard.  I was mostly a stay at home mommy, working part time on the weekends and subbing at the local school when school started.  I decided to start back to college to finish my degree the fall semester after Kinnley was born.  We were on a tight budget and weren't able to do a lot.  When Kinnley turned 3, we decided we were nearly ready for another baby.  I was going to graduate a year later and we wanted to make sure I would be finished with school before the baby was born.  While we had every intention in making that happen, it didn't work out quite that way.  Easton Wayne was born on December 2, 2010 by repeat c-section.  He was a big boy and was in no way ready to leave his mommy's tummy.  The stinker moved up into my ribs that morning and that is where they pulled him out of.  He was 8 pounds and 19.5 inches long.  He started off with the sweetest softest cry, but then he quit being shy and really showed us how he could scream.  Both of my children have suffered from different stomach issues.  Kinnley was colic, Easton is reflux (bad enough we had to be put on medicine).  Kinnley also dealt with Thrush, and Easton has dealt with extremely dry skin, constipation (from the meds), and a yeast infection.  I think I may look into writing a book next....nah I don't have the time!

So, 16 days after my son was born, I walked across the stage and received my bachelors degree.  I can't tell you how amazing it felt to have finally finished school!  So, in 2010 I changed jobs, we bought our second house, bought a new car, I gave birth to our son, and I graduated college.  I have to say that not only was that an amazing year, it was also very busy!

I love to cook, shop, read, and be crafty when I have the time.  I love to talk about my kids, take pictures and show off the pictures of them, all the while I worry, stress, and debate whether I am spending enough time with each of them.  I look extensively for new recipes that are cheap, quick, and easy for my family and I try to get into the coupon 'club' so that I can save our family some money each month.  I am just a normal mommy and wife.  So, that is why I decided on the name 'That Kind of Mommy'.  I am the kind of mommy that loves, worries, stresses, and brags about her kids, spends most of her time cooking for her family, cleaning up after her family, and spending any extra minutes playing with her family, and tries to find ways to decorate, have fun with, cook for, and entertain inexpensively.  So, in case you don't understand, I am 'That Kind of Mommy', a mommy that I think a lot can relate to.
