Cheap fun...

Wow, when life happens, life happens!  I thought once I finished school I would have all kinds of time to do all the things I want to.  Wrong!  Adding a second kid to the mix makes it seem like I have even less time to get things done.  So, I thought I'd sneak this post in while both kids and Ben are asleep and before my dryer finishes yet another load of laundry.  (I hate folding and putting laundry up.  I don't mind doing it, I just hate finishing the chore.)


I had done this for Kinnley when she was 6 or 7 months old and she LOVED it!  So, thankfully I had kept the balls and just needed the pool.  I'm sure most of you have seen the little ball pits you can get from Wal-Mart, Target, or other places.  They are small, expensive, and in my opinion, not worth the money you pay for them.  So, I decided to make my own.  You can buy the bag of balls from Wal-Mart, I believe it was $20.00 for 50 or 100 ( I don't remember and I can't find the bag at this very second).  I bought this pool at Wal-Mart for $5.  So for $25, I have my own ball pit, perfect for Easton.


I used a larger pool with Kinnley, but even with this smaller size, she could still get in and play with her brother.



I can't believe this little (big) guy is going to be 6 months old this Thursday!  Where has the time gone??


I hope to share a new Pioneer Woman recipe tonight or tomorrow for Sliders.  Yet another yummy recipe I will be keeping for future use.  I hope everybody is having a wonderful Memorial Day!

Manners? Yes please.

Today feels like a blah kind of day.  Easton has successfully slept through the night two nights in a row in his crib.  We put him in there for the first time to sleep at night this weekend.  I find it strange that he was my bigger, stronger baby, but it has taken me nearly 6 months to be ok with moving him away from my close reach and into his room.  Kinnley, who was 6 weeks premature, was in her room right after she turned 4 months old.  I guess he is a mommy's boy....

On top of sleeping through the night in his own crib, he has finally put it all together that he can roll over and that can get him places.  He has been pulling his knees up under him for a while now, but last night he finally straightened both arms and pushed himself up.  So, it looks like it's just a matter of time before he puts the knees and arms together and then we are in trouble!

Kinnley, oh my dear sweet Kinnley girl, has an attitude bigger than she is lately.  (She better lose it now because if she keeps going like she is, she may not make it past the age of 4!)  She was told that she had to pick up all of her toys that were in the living room, put them up in her room, and then start picking up her bedroom.  I was sitting on the couch feeding Easton and Ben was sitting on the other side of the couch watching a basketball game when Kinnley came to the top of the stairs in the dining room and, in the most serious, angry voice with her arms crossed informed us 'Somebody better come help me clean my kitchen stuff up because I didn't make that mess, ____ did.' (I have chosen to omit the child's name for my own reason.)  The force behind her words was not only unexpected but rather uncharacteristic of my dear sweet innocent angel baby (well, that was the description I would use to describe her before the attitude took her over).  I was in shock and unable to speak, but her daddy found it rather funny and started laughing.  So, I decided since it was his friend's kids that further destroyed her room and his wife that told the kids it was time to go without any mention of helping to pick up (this is the second time this has happened, and after the first time, I told him never again, but he's nicer than I am), he could be the one to help her clean her kitchen stuff up.  

So, after remembering the first experience I had with this same situation a while back (her room stayed destroyed for a few weeks because every time I went in there it would just infuriate me that I was the one having to pick it up because people Ben invited over had allowed their kids to reak havic and then happily tell them to put their shoes on because it was time to leave and left, not picking up one single toy...yes I am still irritated about this, so what) I looked for an article that I had read in a Parents magazine about the 25 manners all children should know so that I could share it with all of you.

No, picking up toys after a playdate, before you leave didn't make it onto this list (although I firmly believe it should have), but there are a lot of other 'manners' that you might not even think about that all children should know.  For the record, here is my two cents...if you go to somebody's house and your children play with their toys, you should have your children help pick up before leaving.  If Kinnley gives me a hard time, I get in there to help, while she is being told if she doesn't help she's in so much trouble (yes I threaten spankings and she has pushed to that point before).  My child doesn't get to sit and watch guests at our house pick up her toys, she is told to help clean up with them, the same when we go to somebody else's house.  If we have ever been to your house and have left before helping to clean up, I am honestly, truthfully, so sorry.  I will understand if we are never invited over again.  If you have ever come to my house and left without your kids helping to pick up or even mentioning to them to go help pick up, don't be surprised if you're not invited again or if my husband invites you, don't expect me to be all cheery and excited to see you...sorry if that's a little to forward or harsh, but it's my house, get over it.  (I'll hop off of my soap box now.)

Now that I have had my little rant, here are the 25 Manners All Children Should Know, according to Parents.

1. When asking for something say 'Please'. 

2. When receiving something, say 'Thank you'.  

3. Do not interrupt grown-ups who are speaking with each other unless there is an emergency. They will notice you and respond when they are finished talking.

4. If you do need to get somebody's attention right away, the phrase "excuse me" is the most polite way for you to enter the conversation.

5. When you have any doubt about doing something, ask permission first. It can save you from many hours of grief later.

6. The world is not interested in what you dislike. Keep negative opinions to yourself, or between you and your friends, and out of earshot of adults.

7. Do not comment on other people's physical characteristics unless, of course, it's to compliment them, which is always welcome.

8. When people ask you how you are, tell them and then ask them how they are.

9. When you have spent time at your friend's house, remember to thank his or her parents for having you over and for the good time you had.

10. Knock on closed doors -- and wait to see if there's a response -- before entering.

11. When you make a phone call, introduce yourself first and then ask if you can speak with the person you are calling.

12. Be appreciative and say "thank you" for any gift you receive. In the age of e-mail, a handwritten thank-you note can have a powerful effect.

13. Never use foul language in front of adults. Grown-ups already know all those words, and they find them boring and unpleasant.

14. Don't call people mean names.

15. Do not make fun of anyone for any reason. Teasing shows others you are weak, and ganging up on someone else is cruel.

16. Even if a play or an assembly is boring, sit through it quietly and pretend that you are interested. The performers and presenters are doing their best.
17. If you bump into somebody, immediately say "Excuse me."

18. Cover your mouth when you cough or sneeze, and don't pick your nose in public.

19. As you walk through a door, look to see if you can hold it open for someone else.

20. If you come across a parent, a teacher, or a neighbor working on something, ask if you can help. If they say "yes," do so -- you may learn something new.

21. When an adult asks you for a favor, do it without grumbling and with a smile.

22. When someone heps you, say "thank you." That person will likely want to help you again. This is especially true with teachers!

23. Use eating utensils properly. If you are unsure how to do so, ask your parents to teach you or watch what adults do.

24. Keep a napkin on your lap; use it to wipe your mouth when necessary.

25. Don't reach for things at the table; ask to have them passed.

Pudding Pie
1 Box Instant Chocolate Pudding Mix
2 1/2 Cups Milk
1 Prepared Graham Cracker Crust (You can make your own if you really want to)
Cool Whip (Or whipping cream & powder sugar if you want to make your own.  There is just something self gratifying after you make whipped cream from 'scratch'.  I did make some tonight and it was Yummy!)

Mix pudding mix and milk together with a whisk for about 2 minutes.  Pour mix into pie shell and top with whipped cream.  Put in the refrigerator for about an hour.  Enjoy!

It's easy, cheap, but oh so yummy.  My family loves it and it's my go to desert when I want something chocolatey, but don't want to bake anything.

Anniversary Weekend

Last Saturday Ben and I celebrated our sixth wedding anniversary.  We, well I, had plans of going away for a night or two, but I can't be away from a certain little boy that long.  So, instead we decided to go out to eat at a new place (new to us) in Fort Worth.  My sweet sister and her husband offered to watch the kids for us, so we took them up on that.  I made reservations for Saturday night at Texas de Brazil.  We have friends who have been before and have told us how wonderful it was, so we decided to try it.  I had every intention of taking pictures to share, but once in the restrauant, my focus was not on pictures.

I had thankfully made reservations (when we got there it was up to a 45 minute wait), so we were taken right to our table.  It was very full, but you had plenty of room at your table to not feel crowded.  Our waiter came over, explained how it 'works', took our drink orders and showed us where the salad bar was.  The salad bar was wonderful.  There were so many different items that you would not find on a regular salad bar.  It gave us a chance to try new and different things.  The soup of the day was Lobster Bisque and it was delicious.  Once we had finished our salads, they took our plates, brought clean plates, our garlic mashed potatoes, and the roasted bananas that were to help cleanse our paletes.  At this point, you have a card that is red on one side and green on the other.  When you are ready for them to bring the different meats, you turn your card to green.  I tried leg of lamb and lamb chops for the first time and they were wonderful.  Our favorite was the house special, which was the top part of the sirloin. 

Everything was amazing from the food to the service.  While the cost, $45 per person, wasn't cheap, you definately get what you pay for.  I would recommend Texas de Brazil to anybody that is looking for a place to have dinner for a special occasion.  We will definately be going back in the future.

We did a little shopping after dinner and then went to pick the kiddos up from my sister's house.  Easton woke up with a bad cough Sunday morning and after we woke up from our afternoon nap, I wasn't feeling real great.  So, we were pretty lazy the rest of the weekend.  Thankfully, we have a pretty easy week this week because I felt worse Monday.  I have a house that needs cleaning like nothing else and I need to start getting stuff together for Kinnley's birthday party next month.  Pictures to come.

We are about three weeks or less away from my sister finding out if she's having a boy or a girl.  (Think girl really hard please.)  I really hope that it is a girl because I ordered the first set of matching bows for the new baby and Kinnley to have their pictures made wearing them from Jill at Lots of Laughs Boutique.

Aren't they ADORABLE!!!!  I can't wait to get them in.  This was from her Wednesday Specials last week.  I got two other bows and some leg warmers from her Baby Leg special, so I will have a big package coming this week!  It's hard to be patient!

Isabella Faith Adkinson and Bella's Blessings

As another Mother’s day passes I am sitting here wishing. Wishing for what too many other mothers are wishing, for just one more day with my little girl (or boy). Many of you may not know me, and I think that is why Caramie asked me to guest write her blog one day, and I honestly was not sure when I would or what to write about, but today I just needed to share so I thought this might be ok.

My Daughter, Isabella Faith Adkinson, was born June 20, 2008 and was a wonderful addition to our family along with her twin brother Dax.  Like many couples, my husband and I struggled to have a baby ‘naturally’ so we went through fertility treatments and ultimately In-vitro.  And when the twins arrived, all seemed perfect. They were both healthy and we all went home together after only a few days in the hospital.  For the next 6 months our only struggles were normal as any other new family, lack of sleep, trying to get on a new schedule and just be sure we were doing all we could for the twins.


About 6 months later, Bella began vomiting randomly – at first it was not an alarming thing, but as it did not go away and she not only stopped gaining weight and growing she began losing weight; we knew there was a problem.  After many trips to the Dr. and a couple to the ER, and even a reflux test, we were puzzled and we had no answers.  We spent 3 weeks at Cook Children’s in Fort Worth, and to make a very long story short, they finally found the cause. It was a grade II astrocytoma on her brain stem.

 A parents worse nightmare was happening to us.  We found out on a Friday, and on the following Monday they performed a resection which was by all accounts successful. After a long stay and recovery, we took Bella home just 2 days before her first birthday.


Because of the complications from surgery, Bella had a tracheotomy, and we knew we had a long road ahead of us, but we were so incredibly thankful that our baby girl was home and on her way to a full recovery.  She also suffered from breath holding spells that meant she could not be left alone for even one minute.


During this process, I unfortunately lost my job because I could not be at work – I had to be at the hospital while she was there, and I had to stay home with her because we did not have enough insurance to pay for nursing full time.  So we applied for help from many Government programs as well as private organizations to see if we could get Bella the help she needed and allow me to go back to work to help support our family. Unfortunately, we were turned away for any help, because even though I was a large part of our income, and we needed that income to pay our bills, my husband “made too much money” $500 a year gross to be exact.

Thankfully we are blessed to have family who supported us and helped us through this horrible trial in our life.  But things soon would become even more difficult. Bella was somehow exposed to H1N1 (swine flu) even though we did not take her out and made sure no one came to the house if they even had a cold.  After 5 days on a bypass machine, her little body could not handle the drugs and complications of the pneumonia that developed and she passed at only 17 months old.


You may wonder why I am sharing this with you – it is NOT intended to make you sad, only to show you that honest, hardworking people, who go through an amazing difficult event with a sick child, do not get the help they desperately need just to survive.

Once Bella passed, we knew we had to do something to help other families. Her little life had to have more purpose that we could see in the short time that she was here. 


That is how Bella’s Blessing Foundation was formed.  We are a non-profit foundation, 501c3 qualified, and have just completed our first year of helping families who are turned away from other programs and assistance.



We provide everything from a dinner gift card while at the hospital to get a few minutes away to gas money to travel to the hospital or Dr. visits, all the way up to utility bills and mortgages.

In our first year, we have helped approximately 125 families and raised more than $75,000 for our cause.  We even received a grant from The Texas Rangers Baseball team.  We held our first annual Casino Night benefit and auctioned off a Harley Davidson which was donated to us.


To start the foundation, I held a garage sale and used the proceeds to file our paperwork. Organizations around the area donate to us, some on a monthly basis, some when they get referrals from our followers, and some just $5 at a time.

We primarily focus our attention on families with sick children who are being cared for in the DFW metroplex at one of the many children’s hospitals we are blessed to have, but have also helped families in the Houston area, West Texas, South Texas and even California.

We have two pages on Facebook if you would like to follow us and help families in need. We will soon start planning our second Casino night – which will be in September.

Burritos & a Special Guest

I'm back. I feel like some kind of eerie music or an evil laugh should follow that statement.  Anyways, I promised I would share a quick tweaked Pioneer Woman recipe, and I will not disappoint.  So, here it goes.

Quick Burritos (you can find the actual PW recipe here)
1 lb ground beef
1/2 medium onion chopped
Cumin, Garlic Powder, Salt, Pepper (basically whatever you want to season your meat with)
1 can mild red enchilada sauce (I use mild because I'm a wimp...I can't handle chewing big red gum much less medium or spicy enchilada sauce, so use whatever you can handle)
1 can Refried Beans
Shredded Cheddar Cheese
Flour Tortillas (you should probably use the burrito size...I only had the small ones & my burritos were rather funny looking because I filled them too full and didn't have enough tortilla to roll up)

Season your meat and cook it with the chopped onion.  Once the meat is cooked, drain off any excess grease and add 3/4 of the can of enchilada sauce (leave enough to drizzle over the burritos).  Let it simmer (I forgot this so mine was a little juicy, but still good). 

Heat your refried beans in a pan with the shredded cheese until the cheese is melted (the PW says to always grade your cheese off the block, but with two kids plus a husband all demanding my attention while I'm trying to cook, I don't have the time so I used bagged shredded cheese & it was still yummy). 

Heat your tortillas up for just a little while so they're pliable.  Spread beans in the middle (however much you want, just remember you have to figure out a way to roll it up if you fill it too full), top with meat...at this point you can roll it & be done, but that's no fun.  I added extra shredded cheese into mine.  You can also add sour cream, avacado, Mexican rice, whatever you can dream of...oh the possibilities! 

Once you have filled it full, roll it up,place it in a glass baking dish, drizzle with remaing sauce, top with more shredded cheese, and heat in the microwave long enough to melt the cheese.

I had enough beans and meat mixture left over that I made a plate full of nachos to go with the burritos.  I added a bag of the Uncle Ben's 90 second Spanish style rice on the side and that was dinner last night.  Kinnley loved it, Ben loved it and I have to say I found it rather delish myself.  Poor Easton just got to drool over it while he enjoyed his disgusting horrible baby green beans.

Facebook Boutiques?

Yes...it is true, they do exist!  I have quite a few that I keep my eye on to see if they have anything that I can't live without (there's a lot I can't live without, but the hubby says I will have to learn since I have cavier taste on a bologna budget).  A lot of them have specials during the week or they play games one night of the week for items at a discounted price.  My favorite right now is Lots of Laughs Boutique, she also has a website found here.  She makes all kinds of homemade 'goodies' for boys and girls.  She makes bows, dresses, rompers, shirts, and much more. 

I love a good deal and with two kids, it's ever more important that I find those good deals.  LLB (I'm abreviating Lots of Laughs Boutique now becuase it's taking me forever to type and I keep miss typing and we all know that I should really be working, so I'm trying to be quick about this) does Wednesday night specials every Wednesday night.  She will post pictures of different items that she is offering at a reduced price and last week she included the shipping cost in the price paid.  Do you remember the leg warmers I wrote about that I got Easton?  If not, here is a picture to refresh your memory.

Oh yeah, baby looks good!

Well, I got these for $9 (I think, it might have been less, but it wasn't more) and as you know, I LOVE them.  I missed a pair of baseball leg warmers last week during her Wednesday Special.  My heart was broken into tiny little pieces...well, maybe not tiny pieces.  I was disappointed.  Instead, I decided to share the love of leg warmers with Kinnley.  WARNING: The picture I'm about to show you is of absolutely horrific quality, but when all you have is your phone and you really really want to show them off, you just have to make do, so look away if you can't handle it.

Homemade Chicken Tenders

I saw a recipe for chicken tenders using panko bread crumbs (Japanese style bread crumbs) and I decided to do my own version a few nights ago.  I needed something that was quick because Ben was working late, Easton wanted to be held and Kinnley was hungry.  I had bought a box of panko bread crumbs for the Mini Meatball recipe, so I had some left over and decided to go with that.

I took a good helping of the bread crumbs and added Lowery's Season Salt, garlic powder, and pepper.  I then coated chicken tenders in Ranch Dressing, rolled them in the bread crumbs and seasoning and placed them on a foil lined baking sheet.  I baked them at 350 degrees for 15 - 20 minutes.  Bake them until the chicken is done and the outside is becoming crispy.

I got the thumbs up from Ben & Kinnley.  I thought they turned out pretty good too.  The recipe I saw called for the tenders to be coated in Buffalo Wings sauce, but I'm not a big fan of the spicy, so I decided to go with Ranch.  Once you bake the tenders, you can quick freeze them and put them in a zip lock baggy to have quick dinners or lunches in the quantity you need at later times.  I think the next time I use this, I may cut the tender into more of a nugget size and make extras so I can freeze, instead of buying frozen nuggets from the store.  As you can see I didn't use any type of measurements, so it's very customizable.  I might try coating the nuggets/tenders in BBQ sauce next time, just to see if it is as good.

It's cold and rainy here at our house, and Easton has been running a low grade temp since yesterday morning.

He has no other 'symptoms' for me to try to figure out why.  This is definately one of those times that I wish they had a little scrolling screen on their back, toosh, or anywhere that would tell you what's wrong.  Or, maybe an instruction book, that would help.  I guess that wouldn't be as much fun if you had all the answers, huh.  Maybe I'll write an instruction book for kids one day...there's an idea. Anyways, Kinnley went to church with Nana, Ben is at work again (his last day of was last Sunday and they are still a long ways away from having all the power lines fixed from the wildfires), which leaves me and the little man to snuggle on the couch.  Ok, I'll be honest, it didn't take a lot of arm twisting to get me to decide that.  I could get so much done without Kinnley here (she's the best at undoing what I've done...little stink is fast at it too). 

On a sidenote - we are guilty of having watched the royal wedding Friday, and Kinnley, who loves all the Disney princess, came up with her own princess name. 

I would like to introduce to you Princess McKinnley Stinkerbell (Stinkerbell comes from our babysitter's helper who Kinnley loves to death).
