Quick Burritos (you can find the actual PW recipe here)
1 lb ground beef
1/2 medium onion chopped
Cumin, Garlic Powder, Salt, Pepper (basically whatever you want to season your meat with)
1 can mild red enchilada sauce (I use mild because I'm a wimp...I can't handle chewing big red gum much less medium or spicy enchilada sauce, so use whatever you can handle)
1 can Refried Beans
Shredded Cheddar Cheese
Flour Tortillas (you should probably use the burrito size...I only had the small ones & my burritos were rather funny looking because I filled them too full and didn't have enough tortilla to roll up)
Season your meat and cook it with the chopped onion. Once the meat is cooked, drain off any excess grease and add 3/4 of the can of enchilada sauce (leave enough to drizzle over the burritos). Let it simmer (I forgot this so mine was a little juicy, but still good).
Heat your refried beans in a pan with the shredded cheese until the cheese is melted (the PW says to always grade your cheese off the block, but with two kids plus a husband all demanding my attention while I'm trying to cook, I don't have the time so I used bagged shredded cheese & it was still yummy).
Heat your tortillas up for just a little while so they're pliable. Spread beans in the middle (however much you want, just remember you have to figure out a way to roll it up if you fill it too full), top with meat...at this point you can roll it & be done, but that's no fun. I added extra shredded cheese into mine. You can also add sour cream, avacado, Mexican rice, whatever you can dream of...oh the possibilities!
Once you have filled it full, roll it up,place it in a glass baking dish, drizzle with remaing sauce, top with more shredded cheese, and heat in the microwave long enough to melt the cheese.
I had enough beans and meat mixture left over that I made a plate full of nachos to go with the burritos. I added a bag of the Uncle Ben's 90 second Spanish style rice on the side and that was dinner last night. Kinnley loved it, Ben loved it and I have to say I found it rather delish myself.
